Ingredients

  • 3 tablespoons Almond flour
  • 2 tablespoons Unsweetened cocoa powder
  • 2 tablespoons Erythritol (or low-carb sweetener of choice)
  • 0.5 teaspoon Baking powder
  • 1 Egg
  • 2 tablespoons Unsweetened almond milk (or water)
  • 0.5 teaspoon Vanilla extract
  • 1 pinch Salt
  • 1 tablespoon Sugar-free chocolate chips (optional)

Directions

Step 1

In a microwave-safe mug or ramekin, combine almond flour, unsweetened cocoa powder, erythritol, baking powder, and a pinch of salt. Mix well to ensure no clumps remain.

Step 2

Add the egg, unsweetened almond milk, and vanilla extract to the dry ingredients. Stir until you have a smooth batter.

Step 3

If desired, fold in sugar-free chocolate chips for an extra chocolatey touch.

Step 4

Place the mug or ramekin in the microwave and cook on high for 60-90 seconds. The cake is done when the top is set and springs back lightly to the touch. Be careful not to overcook.

Step 5

Let the cake cool for a minute before enjoying, as it will be very hot. Optionally, top with whipped cream or a sprinkle of cocoa powder.
