Ingredients

  • 6 large eggs
  • 0.25 cup heavy cream
  • 0.5 cup shredded cheddar cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 0.5 cup fresh spinach, chopped
  • 1 tablespoon butter or cooking spray

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Grease a muffin tin with butter or spray with cooking spray to prevent sticking.

Step 3

In a large mixing bowl, whisk together the eggs and heavy cream until well combined and slightly frothy.

Step 4

Add the shredded cheddar cheese, shredded mozzarella cheese, grated Parmesan cheese, salt, and pepper to the egg mixture. Stir until the cheeses are evenly distributed.
