Ingredients

  • 500 ml Low-fat milk
  • 3 large Egg yolks
  • 40 g Granulated erythritol (or low-calorie sweetener of choice)
  • 1 tsp Vanilla extract
  • 0.5 tsp Ground cinnamon
  • 10 g Cornstarch
  • 1 pinch Salt

Directions

Step 1

In a medium saucepan, heat the low-fat milk over medium heat until it begins to steam but does not boil. Stir occasionally to prevent scorching.

Step 2

In a mixing bowl, whisk together the egg yolks, granulated erythritol, cornstarch, and a pinch of salt until smooth and creamy.

Step 3

Gradually pour about 1/4 of the hot milk into the egg mixture, whisking constantly to temper the eggs and prevent curdling.

Step 4

Once the egg mixture is tempered, slowly pour it back into the saucepan with the remaining hot milk, whisking continuously.

Step 5

Lower the heat to medium-low and cook the mixture, stirring constantly with a wooden spoon or heat-resistant spatula, until it thickens to a custard-like consistency. This should take about 5–7 minutes. Be careful not to let it boil, as it may curdle.

Step 6

Remove the saucepan from heat and stir in the vanilla extract and ground cinnamon. Mix well to ensure even distribution of flavors.

Step 7

Pour the custard into individual serving dishes or ramekins. Allow it to cool to room temperature, then refrigerate for at least 2 hours to set.

Step 8

Before serving, optionally dust with an additional pinch of ground cinnamon for garnish. Serve chilled and enjoy your low-calorie vanilla and cinnamon custard!
