Ingredients

  • 100 grams Dark chocolate (70% cocoa or higher)
  • 1 tablespoon Unsweetened cocoa powder
  • 200 grams Non-fat plain Greek yogurt
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Liquid stevia (or sweetener of choice)
  • 3 large Egg whites
  • 1 pinch Salt

Directions

Step 1

Melt the dark chocolate in a heatproof bowl over a pot of simmering water (double boiler method) or in 20-second intervals in the microwave, stirring well after each interval until smooth. Let it cool slightly.

Step 2

In a medium bowl, whisk together the Greek yogurt, cocoa powder, vanilla extract, and liquid stevia until smooth. Add the melted chocolate and mix thoroughly until combined.

Step 3

In a separate clean bowl, using an electric whisk or stand mixer, beat the egg whites with a pinch of salt until stiff peaks form. This should take about 3-4 minutes.

Step 4

Gently fold a third of the egg whites into the chocolate mixture to lighten it. Then fold in the remaining egg whites in two additions. Be careful not to deflate the mixture; use light, sweeping motions to preserve the airy texture.

Step 5

Divide the mousse evenly into individual serving glasses or bowls. Cover with plastic wrap and refrigerate for at least 2 hours (or overnight) to set.

Step 6

Optional: Before serving, garnish with a light dusting of cocoa powder, a few fresh berries, or a mint sprig.
