Ingredients

  • 6 large Egg whites
  • 1 cup Asparagus
  • 1 spray Olive oil spray
  • 1 clove Garlic
  • 0.25 teaspoon Salt
  • 0.125 teaspoon Black pepper
  • 1 tablespoon Chopped fresh parsley (optional)

Directions

Step 1

Wash the asparagus and trim the woody ends. Cut the asparagus into bite-sized pieces, about 1 inch in length.

Step 2

Finely mince the garlic clove and set it aside.

Step 3

In a nonstick skillet, spray a light layer of olive oil and heat over medium heat.

Step 4

Add the asparagus to the skillet and stir-fry for about 5 minutes or until tender-crisp. Stir occasionally to prevent burning.

Step 5

Add the minced garlic to the skillet and sauté for 1 minute until fragrant.

Step 6

Reduce the heat to low. Push the asparagus to the side of the pan and pour the egg whites into the other half of the skillet.

Step 7

Sprinkle the salt and black pepper over the egg whites and asparagus. Allow the egg whites to set for 1-2 minutes without stirring.

Step 8

Gently scramble the egg whites, mixing them with the asparagus, until the eggs are fully cooked but still soft, about 2-3 minutes.

Step 9

Remove the skillet from heat and serve immediately. Garnish with chopped fresh parsley if desired.
