Ingredients

  • 120 grams Natural peanut butter (unsweetened)
  • 50 grams Brown sugar substitute (or coconut sugar)
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 15 grams Mini chocolate chips (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a medium mixing bowl, combine the natural peanut butter and brown sugar substitute until smooth.

Step 3

Add the egg, vanilla extract, baking soda, and salt to the mixture. Stir until all ingredients are fully incorporated and the dough is smooth.

Step 4

Using a small cookie scoop or tablespoon, portion out the dough onto the prepared baking sheet. Aim for 12 evenly sized portions.

Step 5

Flatten each cookie slightly with the back of a fork to create the classic crisscross pattern.

Step 6

If desired, garnish with a few mini chocolate chips on top of each cookie, pressing lightly to ensure they stick.

Step 7

Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are lightly golden. Be careful not to overbake, as they will continue to firm up as they cool.

Step 8

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Step 9

Enjoy your low-calorie and fabulous peanut butter cookies with a glass of milk or a cup of tea!
