Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 1 cup Whole wheat breadcrumbs
  • 2 tablespoons Grated Parmesan cheese
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 large Eggs
  • 1 as needed Non-fat cooking spray

Directions

Step 1

Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper and lightly spraying it with non-fat cooking spray.

Step 2

Place the chicken breasts on a cutting board. Slice them in half horizontally to create four equal-sized cutlets. Pound the cutlets gently with a meat mallet until they are an even thickness, about 1/2 inch thick.

Step 3

In a shallow bowl, whisk the eggs together until fully beaten. In a separate shallow dish, combine the breadcrumbs, Parmesan cheese, smoked paprika, garlic powder, onion powder, salt, and black pepper.

Step 4

Working one cutlet at a time, dip the chicken into the beaten eggs, ensuring it is fully coated, then press it into the breadcrumb mixture. Pat the breadcrumbs onto the chicken to coat it evenly and firmly. Repeat this process for all chicken cutlets.

Step 5

Place the breaded chicken cutlets on the prepared baking sheet, evenly spacing them apart to ensure even cooking.

Step 6

Lightly spray the tops of the breaded cutlets with non-fat cooking spray. This will help them crisp up in the oven.

Step 7

Bake the chicken in the preheated oven for 20-25 minutes, flipping the cutlets halfway through the cooking time. The chicken is done when the coating is golden brown and the internal temperature reaches 165°F (74°C).

Step 8

Remove the chicken from the oven and let it rest for 5 minutes before serving. Enjoy your healthier oven-fried chicken cutlets!
