Ingredients

  • 8 ounces Angel hair pasta
  • 3 cups Broccoli florets
  • 1 cup Plain Greek yogurt (non-fat)

  • 1 tablespoon Olive oil
  • 1 tablespoon Fresh lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 0.5 cup Reserved pasta water

Directions

Step 1

Bring a large pot of salted water to a boil. Add the angel hair pasta and cook according to the package instructions until al dente. Drain, reserving 1/2 cup of the pasta cooking water, and set the pasta aside.

Step 2

While the pasta is cooking, bring another medium pot of water to a boil. Add the broccoli florets and blanch for 2-3 minutes, until bright green and tender-crisp. Drain and set aside.
