Ingredients

  • 500 grams beef liver
  • 50 grams all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 medium onions, thinly sliced
  • 2 cloves garlic, minced
  • 250 milliliters milk
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Start by soaking the beef liver in milk. Place the slices in a bowl and cover them with milk. Allow them to soak for 20-30 minutes to reduce any bitterness. While the liver is soaking, prepare the remaining ingredients.

Step 2

In a shallow dish, mix the flour, paprika, salt, and black pepper.

Step 3

After soaking, drain the liver slices and pat them dry with paper towels. Dredge each slice in the seasoned flour mixture, ensuring an even coating.

Step 4

Heat a large skillet over medium heat and add the olive oil and 1 tablespoon of butter.

Step 5

Add the onions to the skillet and cook, stirring frequently, for about 10 minutes, until they are golden and caramelized. Add the minced garlic and cook for another 1-2 minutes until fragrant. Remove the onions and garlic from the skillet and set aside.

Step 6

Add the remaining 2 tablespoons of butter to the skillet. Once melted and hot, add the coated liver slices. Cook for about 3-4 minutes on each side until browned and just cooked through, careful not to overcook as liver can become tough.

Step 7

Return the caramelized onions and garlic to the skillet, spooning them over the liver slices. Cook together for an additional 1-2 minutes to blend the flavors.

Step 8

Remove from heat and garnish with freshly chopped parsley. Serve immediately with your choice of side, such as mashed potatoes, rice, or crusty bread.
