Ingredients

  • 250 grams Black-eyed peas
  • 1 bunch Swiss chard
  • 4 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 2 pieces Garlic cloves
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.5 teaspoons Dried oregano
  • 1.5 liters Water
  • 1 medium Red onion

Directions

Step 1

Rinse the black-eyed peas thoroughly under cold water and set aside.

Step 2

In a medium pot, combine the black-eyed peas with 1.5 liters of water. Bring to a boil over high heat, then reduce to a simmer. Cook for 25-30 minutes or until the peas are tender but not mushy. Drain and set aside.

Step 3

While the peas are cooking, wash the Swiss chard thoroughly. Separate the stems from the leaves. Chop the stems into small pieces and roughly chop the leaves. Set aside in separate bowls.

Step 4

Peel and finely chop the garlic cloves and the red onion.

In a large sauté pan, heat 2 tablespoons of olive oil over medium heat. Add the Swiss chard stems and red onion. Cook for 5-6 minutes, stirring occasionally, until softened.

Add the garlic and cook for another 1-2 minutes, ensuring the garlic does not burn.

Toss in the Swiss chard leaves and cook for 3-4 minutes, stirring frequently, until wilted.

Remove the pan from the heat and drizzle with the remaining 2 tablespoons of olive oil and the freshly squeezed lemon juice. Mix gently to distribute the flavors.
