  • 500 grams loukaniko sausage
  • 2 tablespoons olive oil
  • 1 large, diced yellow onion
  • 4 minced garlic cloves
  • 2 medium, peeled and sliced carrots
  • 2 sliced celery stalks
  • 3 medium, peeled and diced potatoes
  • 400 grams crushed tomatoes
  • 750 milliliters chicken or vegetable stock
  • 125 milliliters dry white wine
  • 1 teaspoon, chopped fresh rosemary
  • 1 teaspoon, chopped fresh thyme
  • 1 piece bay leaf
  • 1 teaspoon, or to taste salt
  • 0.5 teaspoon, or to taste black pepper
  • 2 tablespoons, chopped (for garnish) parsley

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat.

Step 2

Slice the loukaniko sausage into bite-sized pieces and add to the pot. Cook until browned on all sides, about 5-7 minutes. Remove the sausage and set aside.

Step 3

Add the remaining tablespoon of olive oil to the pot. Sauté the diced onion and minced garlic until softened and fragrant, about 3-4 minutes.

Stir in the sliced carrots and celery, cooking for another 4-5 minutes.

Add the diced potatoes to the pot and cook for an additional 2 minutes, stirring occasionally.
