Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 4 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 0.5 cup green bell pepper, diced
  • 0.5 cup red bell pepper, diced
  • 2 stalks green onions, thinly sliced
  • 2 tablespoons Cajun seasoning
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 12 pieces toothpicks or kitchen twine

Directions

Step 1

Preheat your oven to 375°F (190°C).

Using a sharp knife, carefully cut a pocket into the side of each chicken breast without slicing all the way through. Set aside.

In a mixing bowl, combine the cream cheese, shredded cheddar cheese, diced green and red bell peppers, green onions, and 1 tablespoon of Cajun seasoning. Mix until evenly blended.
