  • 6 bell peppers
  • 1 pound ground beef
  • 0.5 pound ground pork
  • 1.5 cups cooked white rice
  • 1 yellow onion, finely chopped
  • 2 celery stalks, finely chopped
  • 2 green onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 0.25 cup chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Creole seasoning
  • 0.5 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 2 tablespoons parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat the oven to 375°F (190°C).

Cut the tops off the bell peppers and remove the ribs and seeds. Set the bell peppers aside and save the tops for later use if desired.

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Add the chopped yellow onion, celery, and garlic to the skillet. Cook until softened, about 5 minutes.
