Ingredients

  • 2 medium-sized eggplant
  • 2 tablespoons olive oil
  • 1 small, finely diced yellow onion
  • 3 cloves, minced garlic
  • 1 teaspoon Cajun seasoning
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup all-purpose flour
  • 0.5 cup breadcrumbs
  • 1 large, beaten egg
  • 2 stalks, finely chopped green onions
  • 2 tablespoons, finely chopped parsley
  • 0.25 cup, for frying vegetable oil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the eggplants in half lengthwise and brush the cut sides lightly with 1 tablespoon of olive oil.

Step 3

Place the eggplants cut-side down on a baking sheet lined with parchment paper. Roast for 25-30 minutes, or until the flesh is soft and tender.

Step 4

Let the eggplants cool slightly, then scoop out the flesh into a mixing bowl and mash it with a fork until smooth. Set aside.

Step 5

Heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for an additional minute. Remove from heat.
