  • 4 cloves garlic cloves, minced
  • 2 cups long-grain white rice
  • 4 cups chicken broth
  • 14.5 ounces canned diced tomatoes, with juice
  • 1 tablespoon cajun seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 pound shrimp, peeled and deveined
  • 0.25 cup scallions, sliced (optional for garnish)
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.

Step 2

Add the sliced andouille sausage and cook until browned, about 4-5 minutes. Remove the sausage and set it aside.

Step 3

Add the remaining 1 tablespoon of olive oil to the pot. Add the chicken pieces and season lightly with salt and pepper. Cook until browned on all sides, about 5-6 minutes. Remove the chicken and set it aside with the sausage.

Step 4

In the same pot, add the onion, bell pepper, and celery. Cook for 5 minutes until the vegetables soften.
