Ingredients

  • 230 grams unsalted butter
  • 250 grams all-purpose flour
  • 50 grams granulated sugar
  • 1 teaspoon salt
  • 4 large eggs
  • 300 grams granulated sugar (for filling)
  • 30 grams all-purpose flour (for filling)
  • 2 tablespoons lemon zest
  • 120 milliliters lemon juice, freshly squeezed
  • 30 grams powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a 9x13-inch baking pan with parchment paper, leaving an overhang on two sides to allow for easy removal.

Step 2

In a large bowl, combine the butter (cut into small cubes), 250 grams of all-purpose flour, 50 grams of granulated sugar, and the salt. Mix with your hands or a pastry cutter until the mixture forms a sandy, crumb-like texture.

Step 3

Press the mixture evenly into the prepared baking pan to form the crust. Use your hands or the back of a measuring cup to smooth it out.

Step 4

Bake the crust for 20 minutes, or until it turns lightly golden. Remove from the oven and set aside to cool slightly while you prepare the filling.

Step 5

In another mixing bowl, whisk together the eggs, 300 grams of granulated sugar, 30 grams of all-purpose flour, lemon zest, and lemon juice until completely smooth.

Step 6

Pour the lemon filling over the partially baked crust, spreading it evenly across the surface.

Step 7

Return the pan to the oven and bake for an additional 25-30 minutes, or until the filling is set and no longer jiggles in the center.

Step 8

Remove the pan from the oven and allow the lemon bars to cool completely in the pan. Once cooled, use the parchment paper overhang to lift the bars out of the pan.

Step 9

Dust the top with powdered sugar before cutting into 16 squares or rectangles.

Step 10

Serve chilled or at room temperature. Store leftover bars in an airtight container in the refrigerator for up to 5 days.
