Ingredients

  • 6 cups Romaine lettuce
  • 1 large Cucumber
  • 4 medium Tomatoes
  • 1 medium Red onion
  • 1 medium Green bell pepper
  • 1 cup Kalamata olives
  • 5 pieces Pepperoncini peppers
  • 8 ounces Feta cheese
  • 0.25 cup Extra-virgin olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dried oregano
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 medium Potatoes
  • 2 tablespoons Mayonnaise
  • 1 tablespoon Lemon juice

Directions

Step 1

Boil the potatoes in a medium pot of water until tender, about 15-20 minutes. Drain and let cool, then peel and mash.

Step 2

In a bowl, combine the mashed potatoes, mayonnaise, and lemon juice. Mix well to create a smooth potato salad base. Set aside.

Wash and dry the romaine lettuce, then chop it into bite-sized pieces and place it in a large mixing bowl.
