Rinse the dry white beans under cold water and soak them overnight in a large bowl filled with water. Drain and rinse before cooking.
Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
Stir in the minced garlic and cook for another minute, being careful not to burn it.
Add the grated or pureed tomatoes, tomato paste, ground cumin, paprika, black pepper, and cayenne pepper (if using). Stir to combine and cook for 5-7 minutes until the mixture thickens and the tomatoes are well-cooked.
