Ingredients

  • 4 pieces bone-in pork chops
  • 3 tablespoons olive oil
  • 4 cloves garlic cloves, minced
  • 1 medium yellow onion, chopped
  • 1 large red bell pepper, sliced
  • 1 large green bell pepper, sliced
  • 28 ounces crushed tomatoes (canned)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoons red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.5 cups dry white wine
  • 2 tablespoons fresh parsley, chopped
  • 5 leaves fresh basil leaves, for garnish

Directions

Step 1

Pat the pork chops dry with a paper towel and season both sides with salt and black pepper.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the pork chops for 2-3 minutes on each side until browned. Remove the pork chops and set aside.

Step 3

Lower the heat to medium and add 1 tablespoon of olive oil to the skillet. Add the minced garlic and cook for 30 seconds until fragrant.

Step 4

Add the chopped onion, red bell pepper, and green bell pepper to the skillet. Cook for 5 minutes, stirring occasionally, until softened.

Step 5

Pour in the white wine, scraping the bottom of the skillet to deglaze. Cook for 2 minutes to reduce slightly.

Step 6

Add the crushed tomatoes, dried oregano, dried basil, red pepper flakes, 1 teaspoon of salt, and 0.5 teaspoons of black pepper. Stir to combine and bring the sauce to a gentle simmer.

Step 7

Return the pork chops to the skillet, nestling them into the sauce. Cover the skillet and cook over medium-low heat for 25-30 minutes, flipping the pork chops halfway through. The pork chops should be tender and fully cooked (internal temperature reaches 145°F/63°C).

Step 8

Sprinkle the finished dish with fresh parsley and garnish with whole basil leaves.

Step 9

Serve hot with crusty bread, over pasta, or alongside roasted potatoes. Enjoy!
