Ingredients

  • 3 cups Raw mixed nuts (almonds, cashews, pecans, walnuts, etc.)
  • 3 tablespoons Honey
  • 2 tablespoons Butter, melted
  • 2 tablespoons Brown sugar
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 1 large Egg white

Directions

Step 1

Preheat your oven to 325°F (163°C). Line a large baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, whisk the egg white until frothy. This will help coat the nuts evenly.

Step 3

Add the mixed nuts to the bowl with the egg white and toss to coat all the nuts thoroughly.

Step 4

In a separate bowl, combine the honey, melted butter, brown sugar, cinnamon, chili powder, salt, and vanilla extract. Stir until well blended.

Step 5

Pour the honey-spice mixture over the coated nuts, stirring until all the nuts are evenly coated with the mixture.

Step 6

Spread the nuts in a single layer on the prepared baking sheet. Make sure they are evenly spaced to promote even roasting.

Step 7

Bake in the preheated oven for 20-25 minutes, stirring halfway through, until the nuts are golden and fragrant. Keep an eye on them to prevent burning.

Step 8

Remove from the oven and let the nuts cool completely on the baking sheet. They will crisp up as they cool.

Step 9

Once cooled, break apart any clumps and transfer the nuts to an airtight container for storage. They will stay fresh for up to 2 weeks.
