Ingredients

  • 1.5 cups Graham cracker crumbs
  • 0.25 cups Granulated sugar
  • 6 tablespoons Unsalted butter, melted
  • 2 cups Fresh mango puree
  • 1 cans Sweetened condensed milk
  • 0.75 cups Heavy whipping cream
  • 0.25 cups Lime juice
  • 1 tablespoons Gelatin powder
  • 3 tablespoons Water
  • 1 mango Fresh mango slices (for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated and the mixture resembles wet sand.

Step 3

Press the graham cracker mixture firmly into the bottom and up the sides of a 9-inch pie pan to form the crust.

Step 4

Bake the crust in the preheated oven for 10 minutes. Remove it and let it cool completely.

Step 5

While the crust cools, prepare the mango filling. In a large mixing bowl, combine the mango puree, sweetened condensed milk, heavy whipping cream, and lime juice. Whisk until smooth and well blended.

Step 6

In a small saucepan, sprinkle the gelatin powder over the water and let it bloom for 2 minutes. Heat gently over low heat, stirring, until the gelatin is fully dissolved.

Step 7

Pour the dissolved gelatin into the mango mixture and whisk thoroughly to combine.

Step 8

Pour the mango filling into the cooled crust and smooth the top with a spatula.

Step 9

Refrigerate the pie for at least 4 hours or until the filling is set.

Step 10

Before serving, decorate the pie with fresh mango slices on top for garnish.

Step 11

Slice, serve, and enjoy your Lou's Mango Pie!
