  • 1 tsp smoked paprika
  • 0.25 tsp ground cinnamon
  • 2 leaves bay leaves
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh cilantro, chopped (for garnish)

Directions

Step 1

Heat the olive oil over medium-high heat in a large heavy-bottomed pot or Dutch oven.

Add the beef stew meat in batches, searing each piece until browned on all sides. Remove the browned beef and set aside.

Reduce the heat to medium and add the onion to the same pot. Sauté for 5 minutes until softened and translucent.

Add the minced garlic and ginger, cooking for 1-2 minutes until fragrant.
