Ingredients

  • 300 grams Lotus root
  • 1 medium Carrot
  • 1 medium Cucumber
  • 0.5 medium Red bell pepper
  • 2 stalks Green onions
  • 2 tablespoons Sesame oil
  • 1.5 tablespoons Rice vinegar
  • 1 tablespoon Soy sauce
  • 1 teaspoon Honey
  • 1 clove Garlic
  • 1 teaspoon Ginger
  • 1 tablespoon Sesame seeds
  • 0.5 teaspoon Salt
  • 500 milliliters Water
  • 10 Ice cubes

Directions

Step 1

Peel and thinly slice the lotus root into 1/8-inch slices.

Step 2

Bring 500ml of water and 0.5 teaspoon salt to a boil in a medium pot. Add the sliced lotus root and blanch for 2-3 minutes.

Step 3

Prepare a bowl of ice water. As soon as the lotus root is blanched, transfer the slices to the ice water to stop the cooking process. Let them chill for a few minutes.

Step 4

Meanwhile, peel the carrot and cut it into thin matchsticks. Do the same with the cucumber and red bell pepper.

Step 5

Chop the green onions finely.

Step 6

In a small bowl, mix together 2 tablespoons sesame oil, 1.5 tablespoons rice vinegar, 1 tablespoon soy sauce, 1 teaspoon honey, 1 finely minced garlic clove, and 1 teaspoon minced ginger.

Step 7

Drain the lotus root slices and pat dry with a clean towel.

Step 8

In a large mixing bowl, combine the lotus root, carrot, cucumber, red bell pepper, and green onions.

Pour the dressing over the vegetables and toss to evenly coat.

Step 10

Sprinkle 1 tablespoon sesame seeds over the salad and gently toss again.

Serve the salad immediately or let it chill in the refrigerator for up to 30 minutes before serving for best flavor.
