Ingredients

  • 1 pound kielbasa sausage
  • 12 ounces egg noodles
  • 2 tablespoons butter
  • 1 medium onion
  • 3 cloves garlic
  • 1 cup sour cream
  • 1 10.5-ounce can cream of mushroom soup
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley
  • 0.5 cup bread crumbs
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

Step 2

Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

Step 3

Slice the kielbasa into thin rounds. Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Cook the kielbasa until browned on both sides, approximately 3-5 minutes. Remove from the skillet and set aside.

Step 4

In the same skillet, melt the butter over medium heat. Add the chopped onion and minced garlic and cook until the onion is soft and translucent, about 5 minutes.

Step 5

In a large mixing bowl, combine the sour cream, cream of mushroom soup, milk, salt, and pepper. Stir until smooth.

Step 6

Add the cooked noodles, browned kielbasa, sautéed onion and garlic, shredded cheddar cheese, and parsley to the mixing bowl. Stir to combine well.

Step 7

Pour the mixture into the prepared baking dish, spreading it evenly.

Step 8

In a small bowl, mix the bread crumbs with 1 tablespoon of olive oil. Sprinkle this mixture evenly over the casserole for a golden, crunchy topping.

Step 9

Bake the casserole in the preheated oven for 25-30 minutes or until it is hot and bubbly, and the topping is golden brown.

Step 10

Remove the casserole from the oven and let it rest for 5 minutes before serving. Garnish with additional parsley if desired.
