Ingredients

  • 4 fillets firm white fish (e.g., cod, tilapia, or snapper)
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon ground turmeric
  • 3 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon red chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 cup canned diced tomatoes
  • 0.5 cup water
  • 2 fresh green chilies, sliced (optional)
  • 2 tablespoons fresh cilantro, chopped

Directions

Step 1

Pat the fish fillets dry with paper towels and place them on a plate.

Step 2

Rub the fillets with lemon juice, salt, and turmeric. Set aside to marinate for 10 minutes.

Step 3

Heat 2 tablespoons of vegetable oil in a large skillet over medium heat.

Step 4

Gently sear the fish fillets for 2-3 minutes per side until lightly golden. Remove the fish from the skillet and set aside.

Step 5

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the chopped onion and sauté until soft and golden, about 5 minutes.

Step 6

Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant.

Step 7

Add the red chili powder, ground cumin, and ground coriander. Stir well to combine with the onion mixture.

Step 8

Pour in the diced tomatoes and water. Stir everything together and let it simmer for 5 minutes, allowing the flavors to meld.

Step 9

Gently place the seared fish fillets back into the skillet. Spoon the sauce over the fish.

Step 10

Reduce the heat to low, cover, and let the fish cook through for 8-10 minutes, depending on the thickness of the fillets.

Step 11

If desired, add the sliced green chilies during the last 2 minutes of cooking for an extra kick of heat.

Step 12

Garnish with chopped cilantro before serving. Serve hot with steamed rice or flatbread.
