Ingredients

  • 10 pieces Organic lemons
  • 750 ml Vodka (at least 40% alcohol by volume)
  • 400 grams Granulated sugar
  • 500 ml Filtered water

Directions

Step 1

Thoroughly wash the lemons in warm water to remove any wax or impurities. Use a vegetable peeler to carefully remove just the outer yellow zest of the lemons, avoiding the bitter white pith.

Step 2

Place the lemon zest into a large, clean glass jar or container with a sealable lid. Pour the vodka over the zest, ensuring the zest is fully submerged.

Step 3

Seal the jar tightly and store it in a cool, dark place for 10-14 days. Shake the jar gently every couple of days to infuse the flavor more evenly.

Step 4

After the infusion period, prepare a simple syrup. In a medium saucepan, combine the granulated sugar and filtered water. Heat the mixture over medium heat, stirring until the sugar is fully dissolved. Let the syrup cool to room temperature.

Step 5

Strain the vodka and lemon zest mixture through a fine mesh sieve or cheesecloth into a large bowl to remove all the zest. Discard the zest.

Step 6

Combine the strained infused vodka with the cooled simple syrup. Stir thoroughly to mix.

Step 7

Pour the limoncello into clean, sterilized glass bottles or jars with tight-fitting lids. Seal the bottles and place them in the refrigerator or freezer for at least 24 hours before serving to allow the flavors to mellow.

Step 8

Serve chilled in small glasses as an after-dinner digestif or use as a base for creative cocktails. Enjoy responsibly!
