Ingredients

  • 300 grams All-purpose flour
  • 150 grams Granulated sugar
  • 2 teaspoons Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 240 milliliters Whole milk
  • 1 large Egg
  • 75 grams Unsalted butter (melted and slightly cooled)
  • 1 teaspoon Vanilla extract
  • 60 grams Unsalted butter (melted, for coating)
  • 100 grams Granulated sugar (for coating)
  • 1 teaspoon Ground cinnamon (for coating)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 12-cup muffin tin or line it with paper liners.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, ground cinnamon, and salt.

Step 3

In a separate bowl, combine the milk, egg, melted butter, and vanilla extract. Whisk until smooth.

Step 4

Create a well in the center of the dry ingredients and pour the wet ingredients into it. Stir gently with a spatula until just combined. Avoid overmixing, as this can make the muffins dense.

Step 5

Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

Step 6

Bake in the preheated oven for 18–20 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.

Step 7

While the muffins are baking, prepare the coating by mixing the granulated sugar and ground cinnamon in a small bowl. Place the melted butter for coating in a separate bowl.

Step 8

Once the muffins are done, remove them from the oven and allow them to cool for about 5 minutes in the tin.

Step 9

Gently remove each muffin from the tin and, while they are still warm, brush the tops and sides with the melted butter using a pastry brush.

Step 10

Roll each butter-coated muffin in the cinnamon sugar mixture until completely coated.

Step 11

Serve warm for the best texture and flavor, or let them cool completely and store in an airtight container for up to 2 days.
