  • 1 cup Unsalted butter (softened)

  • 4 large Eggs
  • 1 cup Coconut milk
  • 2 teaspoons Vanilla extract
  • 1.5 cups Sweetened shredded coconut
  • 8 ounces Cream cheese (softened)
  • 4 cups Powdered sugar
  • 4 tablespoons Heavy cream
  • 0.5 cup Additional shredded coconut for garnish

Directions

Step 1

Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans. Line the bottoms with parchment paper for easy removal.

Step 2

In a medium mixing bowl, whisk together the flour, baking powder, and salt. Set aside.

In a large mixing bowl, use a hand or stand mixer to cream the softened butter and granulated sugar together until light and fluffy, about 3 minutes.

Add the eggs one at a time, mixing well after each addition. Scrape the sides of the bowl as needed.
