Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans. Line the bottoms with parchment paper for easy removal.
In a medium mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, use a hand or stand mixer to cream the softened butter and granulated sugar together until light and fluffy, about 3 minutes.
Add the eggs one at a time, mixing well after each addition. Scrape the sides of the bowl as needed.
Mix in the vanilla extract. Gradually alternate adding the dry ingredients and coconut milk to the creamed mixture, starting and ending with the dry ingredients. Mix just until combined.
Fold in the shredded coconut gently with a spatula.
Divide the batter evenly between the two prepared cake pans and smooth the tops with a spatula.

Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then transfer to a wire rack to cool completely before frosting.
To prepare the frosting, beat the softened cream cheese and powdered sugar together until smooth and creamy. Add the heavy cream, one tablespoon at a time, and beat until the frosting is light and fluffy.
Place one cake layer on a serving plate and spread an even layer of frosting on top. Add the second layer, then frost the top and sides of the cake.
Garnish the cake with additional shredded coconut, pressing it gently onto the sides and sprinkling it on top.
Chill the frosted cake for at least 30 minutes before serving to allow the frosting to set. Slice, serve, and enjoy!
