Ingredients

  • 1.25 cups Warm water (110°F/45°C)
  • 2.25 teaspoons Active dry yeast
  • 2 tablespoons Granulated sugar
  • 1.5 cups Rye flour
  • 2.5 cups All-purpose flour
  • 1.5 teaspoons Salt
  • 1 teaspoon Caraway seeds (optional)
  • 3 tablespoons Unsalted butter (softened)
  • 2 tablespoons Honey
  • 2 tablespoons Milk (for brushing)

Directions

Step 1

In a small bowl, combine warm water, yeast, and sugar. Stir gently and let it sit for 5-10 minutes, or until the mixture becomes frothy.

Step 2

In a large mixing bowl, whisk together rye flour, 1 cup of all-purpose flour, salt, and caraway seeds if using.

Step 3

Add the softened butter and honey to the dry ingredients and stir until combined.

Step 4

Pour the yeast mixture into the bowl and mix until a sticky dough begins to form.

Step 5

Gradually add the remaining all-purpose flour, 1/4 cup at a time, kneading the dough until it is smooth and elastic, about 8-10 minutes. You may not use all the flour.

Step 6

Place the dough in a lightly greased bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm, draft-free area for 1 hour or until it doubles in size.

Step 7

Punch down the dough and divide it into 12 equal portions. Shape each portion into a smooth ball and place them on a greased or parchment-lined baking sheet, spaced about 2 inches apart.

Step 8

Cover the rolls loosely with a kitchen towel and allow them to rise for another 30 minutes, or until they look puffy.

Step 9

Preheat your oven to 375°F (190°C). Brush the tops of the rolls with milk for a shiny, golden finish.

Step 10

Bake the rolls in the preheated oven for 12-15 minutes, or until the tops are golden brown and they sound hollow when tapped on the bottom.

Step 11

Remove the rolls from the oven and allow them to cool slightly on a wire rack before serving. Enjoy warm with butter or your favorite spread!
