Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic cloves, minced
  • 1.5 pounds ground beef (80% lean)
  • 2 14.5-ounce cans diced tomatoes with green chilies
  • 1 15-ounce can tomato sauce
  • 1 15-ounce can kidney beans, drained and rinsed
  • 1 15-ounce can black beans, drained and rinsed
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.25 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.5 ounce dark chocolate (optional, for depth of flavor)

Directions

Step 1

Heat the olive oil in a large heavy-bottomed pot or Dutch oven over medium heat.

Step 2

Add the diced onion and sauté until softened and translucent, about 5 minutes.

Step 3

Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 4

Add the ground beef to the pot and cook, breaking it apart with a wooden spoon, until browned and no longer pink, about 7–8 minutes. Drain any excess fat if necessary.

Step 5

Stir in the chili powder, cumin, smoked paprika, oregano, cayenne pepper, salt, and black pepper. Cook for 1 minute to toast the spices.

Step 6

Pour in the diced tomatoes with green chilies, tomato sauce, beef broth, kidney beans, and black beans. Stir everything to combine.

Step 7

Reduce the heat to low, cover, and simmer the chili for 45 minutes, stirring occasionally to prevent sticking.

Step 8

Optional: Stir in the dark chocolate during the last 10 minutes of cooking to add a rich, subtle depth of flavor.

Step 9

Taste and adjust seasonings as necessary, adding more salt, cayenne, or spices if desired.

Step 10

Serve hot, garnished with your favorite toppings such as shredded cheese, sour cream, fresh cilantro, or diced avocado. Enjoy!
