Ingredients

  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 14.5 oz can diced tomatoes (with juice)
  • 8 oz can tomato sauce
  • 15 oz can kidney beans, rinsed and drained
  • 15 oz can black beans, rinsed and drained
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 0.25 tsp cayenne pepper (optional, for heat)
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp vegetable oil

Directions

Step 1

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the ground beef to the pot and cook until browned, breaking it up with a wooden spoon as it cooks, about 5-7 minutes. Drain any excess grease if needed.

Step 3

Add the diced onion and minced garlic to the pot. Cook until the onion is softened and translucent, about 3-4 minutes.

Step 4

Stir in the chili powder, cumin, smoked paprika, oregano, cayenne pepper (if using), salt, and black pepper. Cook for 1 minute to toast the spices and enhance their flavor.

Step 5

Pour in the diced tomatoes (with juice), tomato sauce, beef broth, kidney beans, and black beans. Stir everything together until well combined.

Step 6

Bring the chili to a boil, then lower the heat to medium-low and let it simmer uncovered for 30-35 minutes, stirring occasionally to prevent sticking.

Step 7

Taste and adjust the seasoning if needed—add more salt, chili powder, or cayenne pepper to suit your preference.

Step 8

Serve hot with your favorite toppings such as shredded cheese, sour cream, diced green onions, or tortilla chips.
