Husk and rinse the tomatillos under warm water to remove their sticky residue. Cut them into quarters.
Dice the yellow onion and mince the garlic cloves. Seed and finely chop the jalapeño for a milder heat, or leave the seeds in for extra spiciness.
In a large pot, heat the olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened and translucent.
Add the minced garlic and chopped jalapeño to the pot and sauté for another minute until fragrant.
Add the quartered tomatillos, ground cumin, salt, and black pepper to the pot. Stir well to combine and cook for 5 minutes, allowing the tomatillos to soften.
Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low and simmer uncovered for 10 minutes.

Stir in the shredded chicken and lime juice. Simmer for an additional 5 minutes to allow the flavors to meld together.
Roughly chop the fresh cilantro and stir it into the soup just before serving.
