  • 2 tablespoons Olive oil

  • 0.5 cups White wine
  • 6 cups Chicken or vegetable broth
  • 0.75 cups, grated Parmesan cheese
  • 0.5 teaspoons (adjust to taste) Salt
  • 0.25 teaspoons (adjust to taste) Black pepper
  • 2 tablespoons, chopped (optional for garnish) Fresh parsley
  • 1 teaspoon (optional for brightness) Lemon zest

Directions

Step 1

In a medium saucepan, heat the chicken or vegetable broth over low heat. Keep it warm but not boiling.

Step 2

In a large saucepan or deep skillet, heat the olive oil and 1 tablespoon of the butter over medium heat.

Add the finely chopped onion to the pan and sauté for 3-4 minutes until softened and translucent. Stir frequently to avoid browning.

Add the minced garlic and cook for another 1 minute, until fragrant.

Once the rice is cooked, remove the pan from the heat and stir in the remaining 1 tablespoon of butter and the grated Parmesan cheese. Adjust seasoning with salt and black pepper to taste.

If desired, stir in the lemon zest for brightness and sprinkle fresh parsley on top as a garnish before serving.
