Ingredients

  • 4 cups kale, finely chopped
  • 2 cups red cabbage, thinly sliced
  • 1 cup carrots, julienned
  • 3 stalks scallions, thinly sliced
  • 0.5 cup dried cranberries
  • 0.5 cup slivered almonds, toasted
  • 0.25 cup extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Wash and dry the kale thoroughly. Remove the tough stems and finely chop the leaves. Place them in a large mixing bowl.

Step 2

Add the thinly sliced red cabbage, julienned carrots, and sliced scallions to the bowl with the kale.

Step 3

Sprinkle the dried cranberries and toasted slivered almonds on top of the vegetables.

Step 4

In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until emulsified to create the dressing.

Step 5

Pour the dressing over the kale slaw mixture and toss thoroughly to combine, ensuring all the vegetables are evenly coated.

Step 6

Let the slaw sit for at least 10 minutes to allow the flavors to meld and the kale to soften slightly.

Step 7

Serve immediately as a side dish or refrigerate until ready to enjoy. This slaw can be made a few hours ahead and stored in an airtight container.
