  • 14 ounces diced tomatoes (canned, with juices)
  • 3 cups chicken broth
  • 3 medium potatoes, peeled and cubed
  • 2 medium carrots, peeled and sliced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh cilantro, chopped (for garnish)
  • 4 pieces lime wedges (for serving)

Directions

Step 1

Cut the pork shoulder into 1-inch cubes and pat dry with paper towels. Season generously with salt and pepper.

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Sear the pork cubes in batches, ensuring each side is browned. Remove the pork and set aside.
