Ingredients

  • 2 pounds ground beef
  • 1 large (diced) onion
  • 3 minced garlic cloves
  • 28 ounces (canned) diced tomatoes
  • 15 ounces (canned) tomato sauce
  • 15 ounces (canned, drained and rinsed) kidney beans
  • 15 ounces (canned, drained and rinsed) black beans
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon black pepper
  • 1 cup beef broth
  • 2 tablespoons olive oil
  • 0.25 cup (chopped, optional for garnish) fresh cilantro
  • 0.5 cup (optional for topping) shredded cheddar cheese
  • 0.25 cup (optional for topping) sour cream
  • 1 handful (optional for serving) tortilla chips

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the diced onion and cook until softened, about 5 minutes.

Step 3

Stir in the minced garlic and cook until fragrant, about 1 minute.

Step 4

Add the ground beef to the pot and cook, breaking it up with a wooden spoon, until browned and fully cooked, about 7–8 minutes. Drain excess fat if necessary.

Step 5

Stir in the chili powder, ground cumin, smoked paprika, cayenne pepper, salt, and black pepper. Cook for 1 minute to toast the spices.

Step 6

Add the diced tomatoes (with juice), tomato sauce, kidney beans, black beans, and beef broth. Stir to combine.

Step 7

Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 30 minutes, stirring occasionally to prevent sticking.

Step 8

Taste and adjust seasoning with additional salt or spices if desired.

Step 9

Serve hot, garnished with fresh cilantro, shredded cheddar cheese, and a dollop of sour cream if desired. Pair with tortilla chips for added crunch!
