Ingredients

  • 2 pieces chicken breasts
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 pieces garlic cloves, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 large onion, thinly sliced
  • 2 pieces bell peppers, thinly sliced (any color)
  • 8 pieces flour tortillas
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 0.5 cup sour cream (optional)
  • 0.5 cup guacamole (optional)

Directions

Step 1

In a small bowl, whisk together 2 tablespoons of olive oil, lime juice, minced garlic, chili powder, cumin, paprika, salt, and black pepper to create the marinade.

Step 2

Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over them, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Step 3

Preheat a large skillet or grill pan over medium-high heat. Add 1 tablespoon of olive oil.

Step 4

Remove the chicken from the marinade, letting any excess drip off, and cook in the skillet or grill pan for about 5-6 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C). Transfer the chicken to a plate and let it rest for 5 minutes.

Step 5

In the same skillet, add the sliced onion and bell peppers. Sauté for 4-5 minutes, stirring frequently, until the vegetables are tender but still slightly crisp. Season with a pinch of salt and pepper if desired.

Step 6

While the vegetables are cooking, warm the flour tortillas in a dry skillet or microwave, wrapping them in a damp paper towel to prevent them from drying out.

Step 7

Slice the rested chicken into thin strips and add it back to the skillet to mix with the sautéed vegetables. Cook for 1 additional minute to combine flavors.

Step 8

Serve the chicken and vegetable mixture on warm tortillas. Top with chopped cilantro, sour cream, or guacamole if desired. Enjoy!
