Ingredients

  • 2.5 pounds beef chuck roast
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Directions

Step 1

Season the beef chuck roast generously with salt and pepper. Dredge the roast in flour, shaking off any excess.

Step 2

Heat the vegetable oil in a large Dutch oven or heavy pot over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side. Remove the roast and set it aside.

Step 3

In the same pot, add the diced onion and sauté for 2-3 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Deglaze the pot by pouring in 1 cup of beef broth, scraping the bottom to release the browned bits. Add the remaining beef broth, Worcestershire sauce, dried thyme, and bay leaf. Stir to combine.

Step 5

Return the roast to the pot, ensuring it is mostly submerged in the liquid. Bring the mixture to a gentle simmer, then cover and reduce the heat to low.

Step 6

Cook the roast for 2.5 to 3 hours, or until the beef is tender and easily shredded with a fork. Turn the roast halfway through cooking for even flavor distribution.

Step 7

Remove the cooked roast from the pot and set it aside. Discard the bay leaf.

Step 8

In a small bowl, mix the cornstarch and water to form a slurry. Slowly stir the slurry into the pot to thicken the gravy. Simmer for 2-3 minutes until the gravy reaches your desired consistency.

Step 9

Shred or slice the beef as desired and return it to the pot, stirring to coat it in the gravy.

Step 10

Serve hot over mashed potatoes, rice, or buttered egg noodles. Enjoy!
