Ingredients

  • 1 medium head green cabbage
  • 2 large carrots
  • 0.5 medium red onion
  • 0.5 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon granulated sugar
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon celery seed
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Remove any wilted outer leaves from the cabbage. Cut the cabbage in half, remove the core, and thinly slice the cabbage into shreds using a sharp knife or a mandoline slicer.

Step 2

Peel the carrots and grate them using a box grater or the grating attachment on a food processor.

Step 3

Thinly slice half of a red onion into very fine strips.

Step 4

In a large mixing bowl, combine the shredded cabbage, grated carrots, and sliced red onion. Toss well to mix evenly.

Step 5

In a separate small bowl, make the dressing by whisking together the mayonnaise, apple cider vinegar, sugar, Dijon mustard, celery seed, salt, and black pepper until smooth.

Step 6

Pour the dressing over the cabbage mixture. Toss the coleslaw thoroughly to ensure all the vegetables are evenly coated with the dressing.

Step 7

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together. For best results, refrigerate for 2-4 hours.

Step 8

Before serving, give the coleslaw a quick toss. Taste and adjust seasoning if needed with additional salt or pepper.

Step 9

Serve chilled as a side dish and enjoy!
