Ingredients

  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 6 large, sliced thinly yellow onions
  • 1 teaspoon granulated sugar
  • 4 cloves, minced garlic
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon smoked paprika
  • 2 sprigs fresh thyme
  • 1 whole bay leaf
  • 2 tablespoons Louisiana-style hot sauce
  • 6 cups beef stock
  • 1 cup dry white wine
  • 1 loaf, sliced French bread
  • 1.5 cups, shredded gruyere cheese
  • 0.5 cups, grated Parmesan cheese
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

In a large, heavy-bottomed pot, melt the butter and olive oil over medium heat.

Step 2

Add the sliced onions and sprinkle them with the sugar. Stir to coat the onions evenly.

Step 3

Cook the onions for 30-40 minutes, stirring occasionally, until they are deeply caramelized and golden brown. Lower the heat if needed to prevent burning.

Step 4

Add the minced garlic, cayenne pepper, and smoked paprika. Stir and cook for 1-2 minutes until fragrant.

Step 5

Pour in the white wine and scrape the bottom of the pot to deglaze any browned bits. Let it simmer for 3-4 minutes to reduce slightly.

Step 6

Add the beef stock, thyme sprigs, bay leaf, and Louisiana-style hot sauce. Stir to combine.

Step 7

Bring the soup to a boil, then reduce the heat to low and simmer uncovered for 30 minutes. Discard the thyme sprigs and bay leaf.

Step 8

While the soup is simmering, preheat your oven broiler to high.

Step 9

Toast the slices of French bread on a baking sheet until golden brown on both sides.

Step 10

Ladle the soup into oven-safe bowls. Place a slice of toasted bread on top of each bowl, then sprinkle generously with shredded Gruyere and grated Parmesan cheeses.

Step 11

Place the bowls under the broiler for 2-4 minutes, or until the cheese is melted, bubbly, and golden brown.

Step 12

Carefully remove the bowls from the oven (they will be very hot) and let them cool slightly before serving.

Step 13

Season with salt and black pepper to taste, and enjoy your Loooozeeana Spicy Caramelized Onion Soup!
