Ingredients

  • 2.5 cups All-purpose flour
  • 1 cup Unsalted butter (cold and cubed)
  • 2 tablespoons Granulated sugar
  • 0.5 teaspoons Salt
  • 6 tablespoons Ice water
  • 6 cups Granny Smith apples (peeled, cored, and sliced)
  • 0.75 cup Brown sugar
  • 0.25 cup Granulated sugar
  • 1.5 teaspoons Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 2 tablespoons All-purpose flour
  • 1 tablespoon Lemon juice
  • 1 large Egg
  • 1 tablespoon Milk
  • 2 tablespoons Coarse sugar (for topping, optional)

Directions

Step 1

In a large bowl, whisk together 2 1/2 cups flour, 2 tablespoons granulated sugar, and 1/2 teaspoon salt.

Step 2

Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.

Step 3

Gradually add 1 tablespoon of ice water at a time to the flour mixture, using a fork to combine, until the dough comes together. You may need about 6 tablespoons.

Step 4

Divide the dough into two equal portions, shape each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

Step 5

Meanwhile, in a large bowl, combine the sliced apples, brown sugar, 1/4 cup granulated sugar, cinnamon, nutmeg, 2 tablespoons of flour, and lemon juice. Toss well to coat and set aside.

Step 6

Preheat the oven to 375°F (190°C).

Step 7

On a lightly floured surface, roll out one dough disk into a 12-inch circle. Gently transfer it to a 9-inch pie dish, letting the edges hang over the rim.

Step 8

Pour the apple filling into the prepared pie crust, spreading it out evenly.

Step 9

Roll out the second dough disk into a 12-inch circle and place it over the apples. Trim the edges, leaving about 1/2 inch overhang, then fold the edges under and crimp them to seal.

Step 10

Cut a few slits in the top crust to allow steam to escape.

Step 11

In a small bowl, whisk together the egg and milk to make an egg wash. Brush it over the top crust, and sprinkle with coarse sugar if desired.

Step 12

Bake the pie in the preheated oven for 50-60 minutes, or until the crust is golden brown and the filling is bubbling.

Step 13

Remove the pie from the oven and let it cool on a wire rack for at least 2 hours before serving.
