Ingredients

  • 60 oz Canned black beans
  • 2 cups Chicken broth
  • 2 tbsp Vegetable oil
  • 1 medium, finely chopped Onion
  • 4 cloves, minced Garlic
  • 1 medium, finely chopped Green bell pepper
  • 2 tsp Cumin
  • 1 tsp Chili powder
  • 0.5 tsp Ground cayenne pepper
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 1 tbsp Fresh lime juice
  • 0.25 cup, for garnish (optional) Sour cream
  • 2 tbsp, for garnish (optional) Chopped fresh cilantro

Directions

Step 1

Drain and rinse canned black beans in a colander to remove excess liquid and reduce sodium content.

Step 2

Heat vegetable oil in a large pot over medium heat.

Step 3

Add the chopped onion, minced garlic, and green bell pepper to the pot. Sauté for 5-7 minutes, or until softened and fragrant.

Step 4

Stir in the cumin, chili powder, cayenne pepper, salt, and black pepper. Cook for 1-2 minutes, allowing the spices to toast and bloom their flavors.

Step 5

Add the rinsed black beans and chicken broth to the pot. Stir well to combine.

Step 6

Bring the mixture to a low boil, then reduce the heat to a simmer. Cover and let simmer for 30 minutes, stirring occasionally.

Step 7

Using an immersion blender, puree the soup directly in the pot until it reaches your desired consistency. (Or transfer half the soup to a countertop blender, puree, and then return it to the pot for a slightly chunky texture.)

Step 8

Stir in the fresh lime juice and simmer for an additional 5 minutes.

Step 9

Taste and adjust seasoning, if necessary.

Step 10

Serve hot, garnished with a dollop of sour cream and a sprinkle of chopped cilantro, if desired.
