Ingredients

  • 6 ounces strip steak
  • 2 tablespoons olive oil
  • 1 cup baby potatoes
  • 2 pieces garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cumin
  • 1 tablespoon tomato paste
  • 0.25 cup water
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Directions

Step 1

Heat 1 tablespoon of olive oil in a medium skillet over medium-high heat.

Step 2

Season the strip steak with salt and black pepper on both sides.

Step 3

Sear the steak in the skillet for 3-4 minutes on each side for a medium-rare finish. Adjust the time to your desired doneness. Remove the steak from the skillet and let it rest on a plate, tented with foil.

Step 4

While the steak rests, add the remaining tablespoon of olive oil to the same skillet.

Step 5

Slice the baby potatoes into thin rounds and add them to the skillet. Cook for 5-7 minutes, stirring occasionally, until they are golden brown and crispy.

Step 6

Add the minced garlic to the potatoes and sauté for 1-2 minutes until fragrant.

Step 7

Stir in the smoked paprika, ground cumin, and tomato paste, cooking for 1 minute to toast the spices and blend the flavors.

Step 8

Pour in the water and stir to create a smoky sauce, scraping up any browned bits from the skillet.

Step 9

Return the steak to the skillet to reheat briefly, spooning the sauce over it.

Step 10

Finish the dish by sprinkling fresh parsley on top and serve immediately, either straight from the skillet or on a warm plate.
