Ingredients

  • 200 grams unsalted butter
  • 250 grams all-purpose flour
  • 100 grams powdered sugar
  • 2 whole lemons lemon zest
  • 200 grams granulated sugar
  • 4 pieces large eggs
  • 120 milliliters freshly squeezed lemon juice
  • 15 grams cornstarch
  • 10 grams powdered sugar (for garnish)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a 9x9-inch baking dish with parchment paper, leaving some overhang for easy removal.

Step 2

In a large mixing bowl, combine the unsalted butter, all-purpose flour, and powdered sugar. Mix until the ingredients come together into a crumbly dough.

Step 3

Press the dough evenly into the prepared baking dish to form a crust. Use the back of a spoon or your hands to smooth it out.

Step 4

Bake the crust in the preheated oven for 15-18 minutes, or until it turns a light golden brown. Remove from the oven and set aside to cool slightly.

Step 5

In another mixing bowl, whisk together the granulated sugar, eggs, and lemon zest until well combined.

Step 6

Gradually stir in the freshly squeezed lemon juice and cornstarch. Whisk until the mixture is smooth and no lumps remain.

Step 7

Pour the lemon filling over the slightly cooled crust, spreading it evenly.

Step 8

Return the baking dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and no longer jiggles in the center.

Step 9

Remove the dessert from the oven and let it cool completely in the pan on a wire rack.

Step 10

Once cooled, lift the dessert out of the baking dish using the parchment paper overhang. Transfer it to a cutting board.

Step 11

Dust the top with powdered sugar for garnish. Cut into 12 equal squares or desired serving sizes.

Step 12

Serve chilled or at room temperature and enjoy!
