Ingredients

  • 4 pieces Large eggs
  • 2 tablespoons Whole milk
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Freshly ground black pepper
  • 1 tablespoons Unsalted butter
  • 4 slices Thick-cut bacon
  • 2 slices Rustic bread (sourdough or ciabatta)
  • 2 tablespoons Mayonnaise
  • 1 teaspoons Dijon mustard
  • 1 tablespoons Fresh chives (optional, for garnish)

Directions

Step 1

1. Start by preparing the mustard mayo. In a small bowl, mix the mayonnaise and Dijon mustard together until well combined. Set aside.

Step 2

2. Heat a nonstick skillet over medium heat and cook the bacon until crispy, about 4-5 minutes per side. Once cooked, transfer the bacon to a plate lined with paper towels to drain excess grease.

Step 3

3. Wipe out the skillet and return it to low heat. Add 1 tablespoon of butter and let it melt.

Step 4

4. In a medium bowl, whisk together the eggs, milk, salt, and black pepper until fully combined.

Step 5

5. Pour the egg mixture into the skillet. Using a silicone spatula, gently stir and fold the eggs continuously to create soft, creamy curds. This should take about 3-5 minutes. Remove from heat just before the eggs are fully set, as they will continue to cook off heat.

Step 6

6. Toast the bread slices to your desired level of crispness, using either a toaster or a hot skillet.

Step 7

7. Assemble the sandwich by spreading the mustard mayo evenly on one side of each slice of toast.

Step 8

8. Lay the crispy bacon onto one slice of toast, top with the soft scrambled eggs, and sprinkle with fresh chopped chives if using.

Step 9

9. Close the sandwich with the second slice of toast, mayo-side down.

Step 10

10. Serve immediately and enjoy your Londoner’s Egg Sandwich with a cup of tea or coffee!
