Ingredients

  • 300 grams Dried split peas
  • 1 Ham hock (or smoked ham shank)
  • 30 grams Unsalted butter
  • 1 medium Onion, diced
  • 1 medium Carrot, diced
  • 2 Celery stalk, diced
  • 2 Garlic cloves, minced
  • 2 Bay leaves
  • 2 Fresh thyme sprigs
  • 1.5 liters Vegetable or chicken stock
  • 0 to taste Salt
  • 0 to taste Black pepper
  • 2 tablespoons Chopped parsley (for garnish)
  • 0 optional Crusty bread (to serve)

Directions

Step 1

Rinse the dried split peas under cold water until the water runs clear. Set aside.

Step 2

In a large, heavy-bottomed pot, melt the butter over medium heat. Add the diced onion, carrot, celery, and garlic, and saute for 5-7 minutes until softened and fragrant.

Step 3

Add the rinsed split peas to the pot, along with the bay leaves, thyme sprigs, and ham hock.

Step 4

Pour in the stock, ensuring the ingredients are fully submerged. Bring the mixture to a boil over medium-high heat.

Step 5

Once boiling, reduce the heat to low, cover the pot, and let the soup simmer gently for about 90-120 minutes. Stir occasionally to prevent sticking.

Step 6

After cooking, remove the ham hock and set it aside to cool slightly. Discard the bay leaves and thyme sprigs.

Step 7

Using an immersion blender, blend the soup to your desired consistency. (You can make it completely smooth or leave some texture for a rustic feel.)

Step 8

Shred the ham from the hock, discarding any fat or bone. Stir the shredded ham back into the soup.

Step 9

Season the soup with salt and black pepper to taste. Simmer for an additional 5-10 minutes to allow the flavors to meld.

Step 10

Ladle the soup into bowls, garnish with chopped parsley, and serve with crusty bread if desired.
