In a large mixing bowl, whisk together the flour, caster sugar, and salt.
Melt the butter in a small saucepan or microwave and let it cool slightly. Lightly beat one of the eggs in a separate bowl.
Make a well in the center of the dry ingredients and pour in the yeast mixture, melted butter, and beaten egg. Mix with a wooden spoon or your hands until a sticky dough forms.
Turn the dough out onto a floured surface and knead for 8-10 minutes until smooth and elastic. Add a sprinkle of flour as needed to prevent sticking, but avoid incorporating too much.
Flatten the dough slightly and scatter the currants or raisins over the surface. Fold the dough over and knead for 2 more minutes to evenly incorporate the dried fruit.
