Ingredients

  • 400 grams pork tenderloin
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 2 teaspoons cornstarch
  • 3 tablespoons vegetable oil
  • 3 cloves garlic cloves, minced
  • 1 tablespoon ginger, julienned
  • 3 stalks spring onions, julienned
  • 1 medium carrot, julienned
  • 3 tablespoons sweet bean sauce (Tian Mian Jiang)
  • 1 tablespoon hoisin sauce
  • 50 milliliters water
  • 1 teaspoon sugar
  • 0.5 teaspoon white pepper

Directions

Step 1

Slice the pork tenderloin into thin strips approximately 5 cm long and 0.5 cm thick.

Step 2

In a bowl, mix the soy sauce, Shaoxing wine, and cornstarch. Add the pork strips, toss to coat evenly, and marinate for 15 minutes.

Step 3

In a small bowl, combine the sweet bean sauce, hoisin sauce, water, and sugar. Stir until smooth and set aside.

Step 4

Heat 2 tablespoons of vegetable oil in a large wok or skillet over medium-high heat. When hot, add the pork strips and stir-fry for 2-3 minutes until lightly browned. Remove the pork from the wok and set aside.

Step 5

In the same wok, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and julienned ginger, stirring until fragrant (about 30 seconds).

Step 6

Add the julienned carrot and spring onions to the wok. Stir-fry for 1-2 minutes until slightly softened.

Step 7

Return the pork to the wok and pour in the prepared sauce mixture. Stir well to evenly coat the pork and vegetables.

Step 8

Cook for another 2-3 minutes, allowing the flavors to meld together. Sprinkle with white pepper to finish.

Step 9

Remove from heat and serve immediately with steamed jasmine rice or noodles.
