Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoons ground nutmeg
  • 0.5 teaspoons ground ginger
  • 0.5 teaspoons salt
  • 0.5 cups unsalted butter, melted and slightly cooled
  • 1 cup granulated sugar
  • 0.5 cups brown sugar, packed
  • 1 cup pure pumpkin puree (not pumpkin pie filling)
  • 2 eggs, large
  • 2 teaspoons pure vanilla extract
  • 8 ounces cream cheese, softened
  • 0.25 cups unsalted butter, softened
  • 2 cups powdered sugar, sifted
  • 1 teaspoon pure vanilla extract (for frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan or line it with parchment paper for easy removal.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt. Set aside.

Step 3

In a large mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth and combined.

Step 4

Stir in the pumpkin puree, eggs, and vanilla extract until the mixture is well blended.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Step 6

Pour the batter into the prepared pan and spread it evenly with a spatula.

Step 7

Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and let the bars cool completely in the pan.

Step 8

While the bars are cooling, prepare the cream cheese frosting. In a medium bowl, beat the softened cream cheese and butter together until creamy and smooth.

Step 9

Add the powdered sugar and vanilla extract, and beat until the frosting is fluffy and well combined.

Step 10

Once the pumpkin bars are fully cooled, spread the cream cheese frosting evenly over the top using a spatula or an offset knife.

Step 11

Cut the frosted pumpkin bars into 16 squares and serve. Store leftovers in an airtight container in the refrigerator for up to 5 days.
