Ingredients

  • 1 cup white rice
  • 4 cups water
  • 1 stick cinnamon stick
  • 1 cup whole milk
  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons granulated sugar
  • 0.5 teaspoon ground cinnamon (for garnish)
  • 2 cups ice cubes

Directions

Step 1

Rinse the white rice thoroughly under cold water until the water runs clear. This removes excess starch.

Step 2

In a large bowl, combine the rinsed rice, 2 cups of water, and the cinnamon stick. Cover and soak the mixture at room temperature for at least 4 hours, or preferably overnight for best flavor.

Step 3

Transfer the soaked rice, cinnamon stick, and soaking water to a blender. Add the remaining 2 cups of water and blend until the mixture is mostly smooth, approximately 2-3 minutes.

Step 4

Strain the blended mixture through a fine-mesh sieve or cheesecloth into a large pitcher to remove any solids.

Step 5

To the strained liquid, add the whole milk, sweetened condensed milk, vanilla extract, and granulated sugar. Stir well until fully combined and the sugar is dissolved.

Step 6

Taste the horchata base and adjust the sweetness by adding more sugar if needed.

Step 7

Chill the horchata in the refrigerator for at least 1 hour before serving to ensure it's thoroughly cooled.

Step 8

To serve, pour the horchata over a glass filled with ice cubes. Garnish each glass with a sprinkle of ground cinnamon for an extra touch of flavor.

Step 9

Enjoy your homemade Lola’s Horchata as a refreshing drink!
